What we’ve been eating: Brill, Sauce Véronique and Scallop Mouse
This month’s Brill with Sauce Véronique celebrates the quiet elegance of classical French cuisine. It’s delicate yet deeply satisfying, and is all about balance.
Brill is a beautiful flatfish found in the northeast Atlantic and Mediterranean, often mistaken for turbot but prized in its own right for its fine texture and clean, almost sweet flavour. Gently cooked, it yields soft, pearlescent flakes, it’s tender and luxurious without heaviness.
The dish is anchored by Sauce Véronique, a hallmark of 19th-century French haute cuisine. Traditionally pairing a white wine and cream reduction with fresh green grapes, the sauce is subtle and poised. We begin with shallots softened in vermouth, reduced with fish stock and enriched with cream and butter. A squeeze of lemon brightens the finish, while fresh tarragon lends a gentle aniseed perfume.
Sweet grapes and grape gel echo the sauce’s heritage, bringing bursts of freshness and a delicate acidity that cuts through the richness. Tarragon oil adds vibrancy and colour, while herbs and edible flowers provide a light, aromatic lift.
Alongside the brill sits a scallop mousse, smooth and airy, adding sweetness from the sea and a soft contrast in texture.
It’s a dish that speaks quietly but confidently; a study in classic technique, handled with care, and a graceful way to see out the season.
What we’ve been drinking: Our very own sparkling wines!
We're really pleased to share the launch of our own special sparkling wines, made in partnership with Fairmile Vineyard in Henley-on-Thames.
This small-batch release includes two bottles - a classic cuvée and a fresh, elegant rosé - both made to reflect the character of the Chiltern Hills and to sit naturally alongside our food.
As a business, we're always keen to work with brilliant local suppliers and the best in Buckinghamshire, and this partnership is a testament to that.
The classic cuvée is bright and easy-drinking, with crisp apple and pear up front, followed by gentle notes of brioche, citrus and almond. It's clean, lively, and works beautifully with our seasonal dishes - especially shellfish and lighter starters.
The rosé is fresh and expressive, with soft red-fruit flavours like wild strawberry and raspberry, balanced by a clean, mineral finish. Light in colour and lively in the glass, it pairs well with richer seafood or is simply enjoyed on its own as an aperitif.
We worked closely with the Fairmile team on both wines, shaping them to feel true to The Greyhound. It has been a genuinely collaborative process, rooted in shared values around quality, local craft, and good hospitality.
Both the cuvée and rosé are now available by the glass and bottle. A small number of bottles are also available to take home - just ask a member of the team.
