July: Our recommendations on the menu this month
What we’ve been eating: Mackerel with cucumber, Granny Smith and horseradish
Currently a starter on our à la carte and lunch menus, this brilliant mackerel dish is great for getting your omega-3 in. We season and grill the fish before plating it up with a mackerel tartare tart using the trimmings and a celeriac remoulade.
The meaty flavour of the mackerel is complemented with some lemony freshness both on the fish and in the tartare, and a hint of sourness from pickled cucumber and a purée made from fresh Granny Smith apples. The whole dish is brought together with a grating of horseradish which gives it that extra kick!
What we’ve been drinking: Pegaso ‘Zeta’ Cebreros Garnacha 2021, Spain
Pegaso winery is based in Spain’s Sierra de Gredos, a mountain range west of Madrid, and was named after the 1940s Spanish car manufacturer.
The region's rugged landscape has granite-laced soils, home to numerous winemaking families for generations and boasting a wealth of old vine Garnacha. The shallow, coarse-textured and well-draining soil gives depth and fruity character to the wines.
This is a wine that you can match with a range of food. Bright ruby in colour, it’s floral and expressive on the nose with primary aromas of red fruits and complex nuances of minerality and spice.
The palate has a good weight, mainly from the intense and deep fruit flavours, whereas the finish is fresh, juicy and clear, yet persistent.
