What we’ve been eating: Pâté en Croûte

It’s your last chance to try head chef James’ pâté en croûte in its current iteration, which is still on both our à la carte and tasting menus while asparagus is still in its peak season.

Inspired by James’ love of French food and cooking techniques, he pairs his homage to the classic dish with beautiful asparagus from the Wye Valley and a mustard mayonnaise.

The pâté is then encircled by a boozy Calvados-infused jelly – the flavour from the Normandy apple brandy is strong but exceedingly complementary, nodding to the dish’s French roots and invigorating the appetite. Definitely one to try when you next dine with us.

What we’ve been drinking: Dennis Hopp'r IPA

In recent weeks, we’ve been working with London-based Mondo Brewery, whose refreshing Dennis Hopp'r IPA we serve from the bar.

This beer won gold at the International Brewing and Cider Awards for its light citrus hop aroma and flavours of pine, balanced with plenty of malt character.

Expect clarity and flavour with a pronounced bitter backbone, taking its cues from the classic American West Coast IPA. It’s been a best-seller and it’s not hard to see why – do come in and try it if you haven’t already.
