September: Our recommendations on the menu this month
What we’ve been eating: Woodland mushroom tart, lemon thyme
The woodland mushroom tart on our à la carte menu has been inspired by our chef James’ love of seasonality. As we enter the autumn months, it’s only right that we celebrate all the amazing British mushrooms practically on our doorstep.
It’s a simple nibble, starting with a thin, crisp brick pastry tart case, in which we layer wild mushroom purée, pickled shimeji mushrooms and fresh chestnut mushrooms. We then finish it with freshly picked lemon thyme from our garden, which has a sweet citrus aroma and taste, and any bitterness is neutralised by the subtle lemony flavour.
What we’ve been drinking: Château la Bastide
Château la Bastide is situated on the north end of Corbières, an Appellation d'origine contrôlée for wine in the Languedoc-Roussillon. Nestled among green hills not far from the sea, the history of this impressive château can be traced to 1770 and its limestone-rich soil gives its wines a unique character.
We have the 2018 Château la Bastide Tradition Corbieres Rouge on the wine list, a beautiful blend of Grenache, Syrah and Mourvèdre, packed full of smoky and spicy aromas. With red fruits, black cherries and blackcurrant on the palate and soft tannins, it’s a perfect wine to welcome in the autumn.
