June: Our recommendations on the menu this month
What we’ve been eating: Berkshire Downs lamb rump, pressed breast, peas, asparagus, baby gem
We’re absolutely loving this lamb dish served with beautiful spring flavours. We cook the lamb rump slowly with a bit of rosemary so it’s nice and juicy, and the belly even more slowly before glazing it in a rich lamb sauce, so the meat is tender and full of flavour by the time it gets to you.
The meat is then served with buttery peas, broad beans and asparagus on a bed of smooth pea mousse, and all cut through with some refreshing mint gel and chive oil.
What we’ve been drinking: Bandol Rosé 2020, Domaine de la Bégude, France
Seventh generation winemaker Guillaume Tari acquired Domaine de la Bégude, an abandoned and overgrown estate in Provence, in 1996. He and his wife have since restored the buildings and replanted the old terraces, predominantly with Mourvèdre.
Certified organic since 2006, the vineyards are located at 400m above sea level at the highest point in the Bandol. The diverse clay and limestone soils provide ideal conditions for Mourvèdre.
The wine displays an aromatic bouquet of fresh raspberry and blackcurrant notes intermingled with citrus and floral aromas. The palate is juicy with bright red fruit and a hint of savoury spice.
