September: Our recommendations on the menu this month

What we’ve been eating: New season guinea fowl, girolles, artichoke and black garlic

As we say goodbye to summer, chef Jermaine is turning the menus to make more use of classic heartier flavour pairings such as game and mushrooms. 

A rich dish on our á la carte and tasting menus this month, the guinea fowl is steamed and poached before being roasted so that the meat is soft and juicy, but the skin is nice and crispy. 

We serve it with barbecued turnip, a sticky chicken sauce, and a creamy artichoke purée.

What we’ve been drinking: 2020 Court Garden, Ditchling Rosé, East Sussex

Court Garden is a family-run, single-estate vineyard and winery in East Sussex, producing sparkling and still wines on a south-facing slope set against the stunning backdrop of the South Downs.

Made with pinot noir aged in French oak barrels to give a smooth structure and body, and rondo cool fermented in stainless steel tanks to preserve the rich berry fruit flavours, this rosé displays some lovely fruit flavours including blackcurrants, mulberry and strawberries.
