August: Our recommendations on the menu this month

What we’ve been eating: Orkney scallop carpaccio with grapefruit and wasabi

We love celebrating British produce on our menus and our hand dived scallops caught in the Orkney Islands are no exception. 

These beautiful scallops need very little preparation to bring out their stunning flavour, we simply slice them and serve them with compressed grapefruit, a reduced orange syrup, yuzu dressing made with soy sauce and mirin to add sharpness with some citrus notes, and a wasabi mayo which adds a smokiness to the dish.

We also finish the dish with some salty fingers, alyssum flowers and nasturtium leaves for flavour and presentation.

What we’ve been drinking: 2022 Domaine Vico Le Bois du Cerf Blanc, Corsica, France

Bois du Cerf is a white wine produced in Corsica by Domaine Vico. A light, dry and acidic natural wine made from Vermentino grapes, it has notes of green apples and pears, citrus fruit, and honey.

We urge you to give it a try, especially if you’re less familiar with natural wines. We’re committed to using suppliers that are conscious of their environmental impact – including those we source our wine from.
