June: Our recommendations on the menu this month

What we’ve been eating: Severn & Wye smoked eel, watercress, pickled celery, Skyr & nasturtium

This dish is inspired by the British seasons and the amazing produce we have available to us on our doorstep, available as a starter on our à la carte menu and on the tasting menu. The eel comes from the River Severn and has been smoked by Severn & Wye smokery and paired with peppery watercress, inspired by that which grows in the river’s waterways. We serve it with refreshing and cool celery and Skyr, an Icelandic yogurt, as well as earthy celeriac and pickled fresh celery for a great balanced dish.

What we’ve been drinking: 2021 Stéphane Ogier ‘Le temps est venu’, Rhône, France

Domaine Michel et Stéphane Ogier is one of the largest estates in the Northern Rhône. Vines have been in the Ogier family for several generations; however, it was Stéphane’s father who changed the direction of the family's land from crop fruits and vegetables to grapes.

This Côte de Rhône is a blend of Grenache Blanc, Roussanne, Bourboulenc, Marsanne, Viognier and Clairette with tropical tones (think pineapple upside down cake), ground almonds, hawthorn blossom, and lots of perfume with fantastic freshness on the palate. It has a very good body that’s not at all rich and with delicious flavours and lovely length, and goes well with so many of our dishes.
