Margriet and Lauren's Wine Achievements | Wine Dinner Highlights

We are incredibly proud to celebrate an extraordinary achievement by our very own Margriet, who has successfully completed the prestigious WSET Diploma in Wines.

Recognised as one of the wine industry's most respected qualifications, the WSET Diploma requires years of dedicated study, extensive tasting experience and a series of demanding examinations covering viticulture, global wine regions, production methods and the international wine trade.

This achievement is a true reflection of Margriet's passion, expertise and commitment to wine. Her knowledge continues to enrich our guests' dining experiences, and we are incredibly fortunate to have her as part of The Greyhound team.

The celebrations continue as we congratulate our Restaurant Manager, Lauren, on achieving her Certified Sommelier qualification.

This internationally recognised certification demonstrates outstanding knowledge of wine, exceptional service standards and technical expertise. Lauren has consistently shown professionalism, enthusiasm, and dedication since joining The Greyhound, and this recognition is a well-deserved acknowledgement of her hard work.

Her growing expertise allows us to offer guests an even more exceptional wine experience, whether they're enjoying a tasting menu or attending one of our popular wine dinners.

We're also delighted to announce Toby's promotion to Junior Sous Chef.

Since joining The Greyhound in May 2024 as Chef de Partie, Toby has demonstrated remarkable consistency, creativity and determination in the kitchen. His progression has been a pleasure to watch, and this promotion reflects both his talent and commitment.

We look forward to seeing Toby continue to develop as part of our award-winning kitchen team.

A Memorable Northern Rhône Wine Dinner

Earlier this month, we welcomed guests for an unforgettable Northern Rhône Wine Dinner, celebrating the exceptional wines of François Villard.

François joined us in person to guide guests through each carefully selected wine, sharing the stories behind the vineyards, winemaking philosophy and individual vintages.

Our Head Chef, George, worked alongside Lauren to create a beautifully balanced four-course menu designed to complement every wine. One standout pairing was the Lamb Saddle, served alongside François Villard's 2021 Saint-Joseph "Poivre et Sol", which proved to be one of the evening's highlights.
